Delicious Lacation Cookies! Yum!

The ingredients in these cookies that are supposed to help boost your milk supply are the oatmeal, the flaxseed meal, and the brewers yeast. From what I’ve read, brewers yeast seems to be the most crucial ingredient. I guess that is why some people suggest a beer to help increase milk supply. And in my opinion, I would rather have a cookie instead of a beer. (unless its been a really tough, bad day!)

As far as taste goes, these cookies honestly just taste like normal oatmeal chocolate chip cookies and they’re SO good! Oatmeal chocolate chip cookies are my favorite cookie of all time. Simple but not too sweet. :-)

Oatmeal Chocolate Chip Lactation Cookies

Ingredients
3 cups of oatmeal (steel-cut or old-fashioned)
2 cups of all-purpose flour
1 and 1/2 cups of brown sugar
1 (12 oz) bag of chocolate chips (I like to use dark chocolate chips)
1 cup of butter, softened
2 eggs
4 tablespoons of water
3 tablespoons of brewers yeast
2 tablespoons of flaxseed meal
1 teaspoon of vanilla extract
1 teaspoon of salt

1 teaspoon of cinnamon
1 teaspoon of baking soda

 

Directions
1. Preheat the oven to 350F.
2. Mix together the flaxseed meal and water, and then set aside for 3-5 minutes.
3. Cream butter and brown sugar together until light and fluffy.
4. Add eggs one at a time and mix until blended.
5. Stir flaxseed mixture and add with vanilla to the butter mix. Beat until blended.
6. Sift together dry ingredients, except oats and chips.
7. Add dry ingredients to butter mixture and mix until fully incorporated.
 8. Stir in oats, and then stir in chocolate chips.
9. Scoop or spoon cookie dough onto baking sheet.
10. Bake for 10-12 minutes, depending on size of cookies.
Makes approximately 3-4 dozen cookies.

Baby Emory is Here!

I can not believe I have been MIA for so long but I have a good reason. I gave birth to my second son, Emory Eli back in November and have been enjoying my mommy time. He came into this world big and beautiful. 8lbs 12ounces, 21.5 inches and absolutely perfect. He has a very serious and calm quality about him (completely opposite than my first son who is very playful and outgoing). Our birthdays are only three three days apart and in some weird way I feel that it connects us somehow. I was not sure how I would feel this time around but giving birth to Emory was just a miraculous as giving birth to my first child. It was amazing and such a blessing. I didn’t know what being a mom of two would feel like. Would I love him as much as I loved my first son, how is that possible? But you know what? I absolutely fell in love with him the moment I saw him. Somehow your heart makes enough space for all your children. Emory is now four months old and is getting bigger by the day. He is a happy baby and has the biggest smile (although right now its all gums!)

 

 

 

 

In case anyone was wondering, Dominic has taken his role as big brother like a champ! He loves the baby so much (sometimes a little too much) and is very protective over him. It is just the cutest thing to see. I am very excited to see their bond grow. I hope they become the bestest of friends! Even though I know sibling rivalry is sure to rear its ugly head at some point.

 

 

I am going to do my best and start blogging more regularly now that things have normalized into my “new reality”!

Baby Bump – 30 Weeks

How far along? 30.5 Weeks (actually I am 31 weeks now – I am behind on posting)
Maternity clothes? Yes!
Stretch marks? No and here is to praying I don’t get any
Sleep: sleep is okay this week, been pretty exhausted
Best moment this week: having my maternity pictures taken! :-)
Miss Anything? just being able to have full movement
Movement: yes, he is very active these days
Food cravings: carbs and sweets
Anything making you queasy or sick: Nada.
Have you started to show yet: yes, this belly is getting big
Gender: BOY!!!
Labor Signs: No but I have been having some Braxton hicks
Belly Button in or out? Out
Wedding rings on or off? On
Happy or Moody most of the time: Happy :-)
Looking forward to: seeing my OBGYN every two weeks now (cant believe its already time)

Baby Bump – 29 Weeks

How far along? 29.5 Weeks (actually I am 30 weeks now – I am behind on posting)
Maternity clothes? Yes!
Stretch marks? No and here is to praying I don’t get any
Sleep: sleep is not so great :-( major heartburn
Best moment this week: bought the baby more adorable clothes. Cant believe he will be this tiny!
Miss Anything? caffeine!
Movement: yes, he is very active these days
Food cravings: carbs!
Anything making you queasy or sick: Nada.
Have you started to show yet: yes, this belly is getting big
Gender: BOY!!!
Labor Signs: No but I have been having some Braxton hicks
Belly Button in or out? Out
Wedding rings on or off? On
Happy or Moody most of the time: Happy :-) with some crabby moments. LOL
Looking forward to: officially closing on the sale of our current home and the purchase of our new home

Baby Bump – 28 weeks

Best moment this week: starting to buy stuff for the new baby’s nursery, FUN STUFF
Miss Anything? caffeine!
Movement: yes, he is very active these days
Food cravings: strange but ginger ale
Anything making you queasy or sick: Nada.
Have you started to show yet: yes, this belly is getting big
Gender: BOY!!!
Labor Signs: No
Belly Button in or out? Out
Wedding rings on or off? On
Happy or Moody most of the time: Happy :-)
Looking forward to: moving into a new house and decorating
